Pav Bhaji Recipe – A Quick & Delicious Vegetable Mash

Ingredients:

  • 2 medium-sized potatoes, peeled and cubed
  • 2 medium-sized carrots, peeled and cubed
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup of frozen green peas
  • 2 tbsp of butter
  • 2 tsp of pav bhaji masala
  • 1 tsp of red chili powder
  • Salt to taste
  • 2 tbsp of lemon juice
  • 8 pav buns
  • Fresh coriander leaves for garnish

Instructions:

  • In a large saucepan, boil the potatoes and carrots until they are soft and can be easily mashed.
  • In a separate pan, heat the butter over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
  • Add the chopped tomato, green bell pepper, and green peas to the pan and cook until the tomato is soft and mushy.
  • Mash the boiled potatoes and carrots and add them to the pan.
  • Add the pav bhaji masala, red chili powder, and salt to taste to the pan and mix well.
  • Cook the mixture for about 5 minutes, stirring occasionally, until the spices are well blended.
  • Add the lemon juice to the pan and mix well.
  • Serve the pav bhaji hot
