Ingredients:
- 2 medium-sized potatoes, peeled and cubed
- 2 medium-sized carrots, peeled and cubed
- 1 large onion, chopped
- 2 cloves of garlic, minced
- 1 large tomato, chopped
- 1 green bell pepper, chopped
- 1/2 cup of frozen green peas
- 2 tbsp of butter
- 2 tsp of pav bhaji masala
- 1 tsp of red chili powder
- Salt to taste
- 2 tbsp of lemon juice
- 8 pav buns
- Fresh coriander leaves for garnish
Instructions:
- In a large saucepan, boil the potatoes and carrots until they are soft and can be easily mashed.
- In a separate pan, heat the butter over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
- Add the chopped tomato, green bell pepper, and green peas to the pan and cook until the tomato is soft and mushy.
- Mash the boiled potatoes and carrots and add them to the pan.
- Add the pav bhaji masala, red chili powder, and salt to taste to the pan and mix well.
- Cook the mixture for about 5 minutes, stirring occasionally, until the spices are well blended.
- Add the lemon juice to the pan and mix well.
