Ragi mudde – Made with finger millet flour

Good food is very often, even most often, simple food. – Anthony Bourdain
Chef Bourdain, hopefully, had this in his life. Ragi mudde is a popular dish in South India, especially in the state of Karnataka. Here’s a simple recipe for you:

Ingredients:

  • 1 cup ragi flour
  • 2 cups water
  • Salt, to taste

Instructions:

    1. In a medium saucepan, bring the water to a boil.
    2. Slowly add the ragi flour to the boiling water, whisking constantly to prevent lumps from forming.
    3. Cook the mixture for a few minutes, stirring constantly, until it thickens into a dough-like consistency.
    4. Remove the saucepan from the heat and let the dough cool for a few minutes.
    5. Once the dough is cool enough to handle, shape it into small balls using your hands.
    6. Bring a pot of water to a boil, and carefully add the ragi mudde balls to the pot.
    7. Cook the mudde for about 10-15 minutes, or until they are cooked through and no longer doughy in the center.
    8. Serve the ragi mudde hot with your choice of accompaniments, such as ghee, chutney, or curries.
