Peaches and Spiced Ribeye Steak
What you need:
- 6 beef ribeye steaks, 1-inch thick
- 12 peaches, peeled, pitted and halved
- 1/4 cup balsamic vinegar
- 2 tablespoons snipped thyme
- 1 tablespoon butter, melted
- 1 tablespoon salt
- 1 tablespoon plus 1/2 teaspoon ground black pepper
- 1 tablespoon paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons lemon pepper seasoning
- 1 teaspoon sugar
- 1 teaspoon ground cumin
- 1/2 teaspoon crushed red pepper
- Fresh thyme sprigs
Combine salt, 1 tablespoon ground black pepper, paprika, garlic and onion powders, lemon pepper seasoning, cumin and red pepper. Rub both sides of each steak with the mixture. Cook steaks on a pre-heated grill, covered, to desired doneness. When ready, remove from heat and let stand for 8 to 10 minutes. Grill peaches in indirect heat for 5 minutes. In a medium bowl, mix together remaining black pepper, balsamic vinegar, snipped thyme, butter and sugar. Toss grilled peaches in the mixture then serve with steak topped with fresh thyme sprigs.
Flank Steak Salad With Cilantro Dressing Grill Style
What you need:
- 1/4 kilogram beef flank steak, fats trimmed and scored in diamond pattern
- 1 corn, husks and silks removed
- 4 cherry tomatoes, halved
- 2 yellow sweet peppers, seeded and halved
- 2 onions, trimmed
- 2 cups mixed greens
Cilantro dressing
- 1 clove garlic, peeled and quartered
- 3 tablespoons lime juice
- 2 tablespoons snipped fresh cilantro
- 2 tablespoons chopped shallot
- 1 tablespoon water
- 1 tablespoon olive oil
- 2 teaspoons honey
- 1/2 teaspoon chilli powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
Mix together garlic, lime juice, cilantro, shallot, water, olive oil, honey, chilli powder, cumin and salt in a blender or food processor. Pulse until mixture is well-combined and smooth. Place half of the dressing in a sealable container and chill in the refrigerator until ready to use. Pour the remaining half in a sealable plastic bag and place steaks in the bag. Refrigerate for 30 minutes. When ready, remove meat from bag and discard excess marinade. Brush corn, sweet peppers and onions with olive oil. Cook meat and corn over medium heat on the grill for 20 minutes or until cooked through. Grill sweet peppers during the last 8 minutes and the onion during the last 4. Cut steaks thinly. In a serving platter, combine grilled meat, grilled vegetables, greens and tomatoes. Top with cilantro dressing.
