Bharwa Bhindi (Stuffed Okra) Recipe

Bharwa Bhindi is a popular Indian dish made by stuffing okra with a mixture of besan (gram flour), spices and tamarind pulp or lemon juice. The okra is then fried until golden brown and crispy. This dish is typically served with roti or rice. It’s a great way to add a new twist to the traditional okra dish and make it more flavorful and enjoyable. This recipe is easy to follow and is perfect for a weeknight dinner or special occasion.

 

Ingredients:
  • 500g okra (bhindi)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp fennel seeds
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp coriander leaves (chopped)
  • 1 tbsp tamarind pulp (or juice of 1 lemon)
  • 1 cup besan (gram flour)
  • 1/2 cup water

Instructions:

  1. Wash and dry the okra. Slit the okra lengthwise, making sure not to cut all the way through.
  2. In a bowl, mix together the besan, 1 tsp of coriander powder, 1 tsp of cumin powder, 1 tsp of red chili powder, 1/2 tsp of turmeric powder, salt, and tamarind pulp or lemon juice. Add water gradually to make a thick batter.
  3. Stuff the okra with this mixture, making sure that the stuffing is tightly packed inside the okra.
  4. Heat oil in a pan and add cumin seeds, mustard seeds, and fennel seeds. Once they start to crackle, add the stuffed okra to the pan.
  5. Fry the okra on medium heat, turning occasionally, until they are golden brown and crispy.
  6. Garnish with chopped coriander leaves and serve hot with roti or rice.
