Creamy Potato Soup
What you need:
- 2 1/2 kg. potatoes, peeled and sliced into bite-sized chunks
- 1/2 kg. diced bacon
- 1 medium carrot, grated
- 1 medium onion, chopped
- 1 can evaporated milk
- 2 chicken bouillon cubes
- 6 cups water
- 3 tablespoons butter
- 4 teaspoons minced parsley
- 2 teaspoons Worcestershire sauce
- 1 teaspoon ground nutmeg
- 1 teaspoon ground mustard
- 1 teaspoon salt
- 1/2 teaspoon red cayenne pepper
Heat a large pot over a campfire then cook bacon in the butter until tender. Set aside. Cook the onions in the bacon grease until tender then set aside with the bacon. Pour 6 cups of water in the pot then add potatoes and chicken bouillon cubes. Bring the mixture to a boil then allow to simmer until potato chunks are tender, about 15 to 20 minutes.
Stir in the carrots and cook until tender. Add the evaporated milk, parsley, Worcestershire sauce, nutmeg, mustard, salt and pepper. Finally, return bacon and onions to the pot and heat 10 minutes more before removing from heat.
Campfire 6-Can Soup
What you need:
- 1 can meaty chilli
- 1 can diced tomatoes
- 1 can tomatoes and green chilli mix
- 1 can kidney beans
- 1 can pinto beans
- 1 can corn
- 1 cup processed cheese
- Salt and ground black pepper to taste
Mix together the meaty chilli, diced tomatoes, tomatoes and green chilli mix, kidney beans, pinto beans and corn in a large pot. Stir and cook over a campfire and bring to a boil. Allow 15 to 20 minutes to simmer to mix the flavors together. While the soup is simmering, dice the processed cheese. Stir the cheese into the pot and stir until it melts and combines with the soup. Season with salt and pepper. Remove from heat and serve immediately!
